Ask anyone in Pakistan how to check whether shehad is asli or nakli and you will hear the same answers: drop it in water and see if it dissolves, hold a match to it, rub it between your thumbs, see if ants avoid it. We keep bees, and we will tell you something most honey sellers will not:

Why the famous home tests fail

Every popular test checks a physical property - thickness, water content, stickiness. The problem is that adulterated honey is engineered to pass exactly these tests. Sugar syrup thickened to the right consistency sinks in water just like pure honey. Meanwhile, a genuine raw honey harvested in a humid season can be slightly thinner and 'fail'.

The water test

Tests thickness, not purity. Thick syrup passes. Thin pure honey can fail.

The flame test

Tests moisture on the surface. Any honey with low surface moisture lets the match strike - adulterated or not.

The thumb test and the ant test

Folklore. Ants are perfectly happy to eat pure honey; anyone who has worked around hives can confirm it.

How honey purity is actually verified

Real verification happens in a laboratory, and it measures things no kitchen can see:

  • C4 sugar analysis - detects added cane or corn syrup by its carbon signature.
  • Sucrose content - pure honey is mostly glucose and fructose; high sucrose signals added sugar.
  • Moisture - the international Codex Alimentarius standard for honey caps moisture at 20%.
  • HMF (hydroxymethylfurfural) - rises when honey is overheated or stored badly; a marker of processing.

These are the parameters set by the Codex Alimentarius, the joint FAO/WHO food standards body. In 2020, an investigation by India's Centre for Science and Environment made headlines across the subcontinent when most major packaged honey brands failed advanced purity testing - a reminder that even branded honey is not automatically safe from adulteration.

So how should a buyer in Pakistan protect themselves?

Since you cannot run a lab test in your kitchen, the honest answer is: choose your source, not your test.

  • Buy from a farm, not a reseller. The shorter the chain between hive and jar, the less room for blending. We harvest and pack every jar ourselves - the same family, since 1974.
  • Expect crystallisation. Raw honey granulates over time. Honey that stays glass-clear for years has usually been processed.
  • Expect variation. Real harvests differ season to season. Perfect uniformity is a factory signature.
  • Ask where it came from. A genuine producer can tell you the floral source and the season. A blender cannot.
